Wholewheat muffins, poached eggs and lacinato kale sautéed in olive oil and seasoned with loads of black pepper. The perfect pre-skiing breakfast.
I did a combination of sauteeing and steaming on the kale. Stems first. The kale takes longer than the eggs if you poach using already boiled water.
I’ve not seen lacinato kale in Europe but spinach or chard would work well.
