Katy Whole Foodie Stateside

I’m in the US for a month, in the mountains of Colorado, enjoying clean air and snow.  In a small town with a nice, but very expensive, health food shop, I’m managing to keep up the whole foodie vibe, at least some of the time.  That is when I’m not eating Mexican or Asian food out!

There was a delicious asparagus soup with just a hint of green chili, served with a seaweed salad, yoghurt and cucumber dressing, quinoa, gomasio and raw courgette and fennel.

Then a healthier take on a hefty pre-skiing breakfast of sprouted wheat muffins, bacon, poached egg and big pile of spinach.  I tried a new breakfast today of rice porridge with succanat (dried sugar cane) and a little milk.  It was actually pretty good.

And a new snack of cottage cheese with green chili.  Chop fresh green chili and marinade in good olive oil.  Add to cottage cheese, or any soft/fresh cheese.  Inspired!

Happy New Year, Whole Foodies

What a Christmas season it was. Turkey, pork and more turkey. Roast potatoes galore (and my Mum makes the best roast potatoes, just knocking my Nan off the top spot. But please don’t tell my Nan), chipolatas and all the other Christmas fare. We had food. We had fun. And in the midst of all that food and fiesta (I was in Spain so I’m not being pretentious), there were a few whole foodie highlights, natural beacons in a sea of pork. My pre-Christmas red lentil curry and lots of delicious avocado salads. At this time of year, you can buy Spanish avocados and Spanish grapefruit. I just found out that I can eat grapefruit despite my fructose allergy as they are quite sour. Yum! I added wild rocket to the avocado salad and local lemon and just wished I could eat like that all year round. And my New Year’s Resolution? To be a good Whole Foodie of course! All the best to you and yours and may the whole foods be plentiful.

Give me whole foods!

Another really poor week on the nutritional index.  Too many rushed business lunches, plenty of ice cream then on Friday night instead of getting down to my whole foodie roots, I said ‘let’s celebrate the bank holiday weekend by stuffing ourselves with pizza, English chocolate, ice cream and Sprite’.  I may not have uttered those exact words but you get the general idea.  Doh! as some would say.

So this morning, we went to Gare de Midi market and stocked up on veggies including some nice looking avocadoes and limes.

Here are some photos from earlier whole foodie meals that didn’t make it onto the blog.

Lapsed Whole Foodie Seeking Redemption

I’m a 35 year old food lover, keen to get back to a whole foods way of eating.  Whole foods just feel better and yet most of the time, I’m eating on the run at all the wrong times and not planning my food at all.  Right now, I’m consuming a lot of sugar and I know I feel better when I eat more whole foods.  I also prefer to eat less meat for health and environment reasons.  So here I am, a lapsed whole foodie looking to get back on track.

It’s not about eating whole foods 100% of the time as I enjoy eating out especially Thai food (and did I mention the ice cream?!) but some years back I ate by Optimum Nutrition principles and felt a lot better, using it to overcome serious immune system issues.  So what happened to me?

I used the good foods to get my health back on track but then began the slippery slope of work, travel, sugar, energy slumps, more sugar and so on… so now it’s time.  I’ll use this blog to share my whole foodie thoughts, meals etc.  If you’re interested in becoming more whole foodie or you have tips and meal ideas to share, please join in the conversation.

It won’t be Katy Whole Foodie every day but I’ll be blogging on my progress, starting with tonight’s dinner of pink rice (yes really), lentils, sweetcorn, samosa, cucumber andfresh coriander, yoghurt and a little pickled cauliflower.  It was wholefoodielicious…
